Who says jam has to be sweet? In this savory and tangy version, shallots are simmered with brown sugar and balsamic vinegar to create a naturally savory jam with a touch of sweetness. It’s a deliciously indulgent burger topping or addition to a cheese plate, and keeps well in the fridge so it’s ready at a moment’s notice.

INSTRUCTIONS

Melt butter in a small saucepan set over medium-low heat. Add the shallots and thyme sprigs and cook until shallots are softened and starting to caramelize, about 8-10 minutes. Add the brown sugar and balsamic vinegar, and continue cooking until the sugar is dissolved and the mixture thickens to a jam-like consistency, about 5-10 minutes longer.

Remove from heat and carefully remove the thyme sprigs. Season with salt to taste and allow to cool.
